Itty Bitty who is growing fast and not so itty bitty any more was at my house on her actual birthday. Her birthday party is scheduled for Saturday. I only had two girls and of course she needed a birthday cake. I mixed up a quick 3 2 1 Cake in a half pint Mason jar and topped it with sparkly pink sprinkles and a splash of colored sprinkles. I found that I didn't have any candles and put a match on the cake instead for her to blow out.
I always have a jar of 3 2 1 Cake mix for just these occasions. And 3 2 1 Cake is also a good choice whenever you want a fast sweet treat for any reason. It's fast easy, and no fuss or mess. I just need to remember to get candles!
3 2 1 Cake is so easy.....just purchase one angel food cake mix (one of the mixes has to be angel food) and another cake mix of our choice....any flavor will work. I'm using a cherry chip with mine here. Mix the two dry cake mixes together and store in a jar or other air tight container. It's now ready and waiting in your pantry.
The formula for a fast 3 2 1 Cake is: mix 3 TB of cake mix with 2 TB of water. You can mix it right in the container you will microwave it in. No need to butter the dish before hand. Now place in microwave for 1 minute. Remove your sweet little cake and top any way you choose or not at all. It's that easy! This is a great way for little ones to start baking with mom too.
I have also tried using this mix in the oven and it works but you have to bake it longer of course. Still it's nice to use when you only want 3 or 4 cup cakes. I suggest buttering your baking dish if you bake it in the oven.

Definitely trying this! I have a microwave cake recipe that I use sometimes but there are toooo many step...it's in the microwave the whole thing should be easy! Thank you for this idea! :D It will fix late night sweet tooth cravings!
