Generously salt and pepper the tomatoes, then sprinkle with 2-3 tablespoons of corn starch. Mix well to coat all the tomatoes. You can use flour if you want to. I think the corn starch gives a crisper finish.
Saute tomatoes turning over often with a spatula. Turn heat down if it begins to smoke. When they are nicely browned, remove from heat.

Diced Fried Green Tomatoes
2-2 1/2 cups of diced green tomatoes
2-3 TB of oil, I used butter and olive oil
2-4 TB of corn starch, use flour if you like
Salt and pepper
Heat oil in a skillet on high heat. Salt and pepper green tomatoes generously and then sprinkle with and mix in corn starch until tomatoes are well covered. Place in skillet and turn them over as they brown with a spatula. If your oil starts to smoke, turn heat down some. Saute until they are as brown and crispy as you like.

Yours look delicious but you will never convince me! My Daddy got me to try those things once and I won't do it again. You will also never get me to try dandelion greens again. He told me I would love them and he lied!

DeleteYummy. Anything fried is good. I made Leah fried bacon, onion and cabbage. I added deli corned beef. My grandbaby on the way was craving it! : D

ReplyDeleteI toss in a little meal in w/the flour mixture to mine. I also cut them up instead of doing one slice at a time.
For a veggie medley i'll add one squash, potato, couple pods of okra, a banana pepper and zucchini. Can make a meal of just this and cornbread.
