I love Mexican Food. Week nights I need dinner to be easy, fast; and this skillet casserole is a winner with only 3 main ingredients. Below is the basic recipe but it is easy to make changes such as.....I often use just salsa and no tomato sauce. (our favorite salsa in this is chipotle) We like intense flavor so I usually increase the ground cumin. You can use taco seasoning instead of cumin and seasoning salt; a can of chopped tomatoes can be used instead of salsa for a milder dish. Use turkey instead of burger; top it with shredded cheese, added chopped black olives or a cup of frozen corn. Anyway you choose to make it, it works!
Easy Mexican Skillet Casserole
1 1/2 - 2 lbs burger
3 - 4 cups of cooked rice
1 - 2 cups of salsa - to your taste
8 oz of tomato sauce
1/2 - 1 tsp of ground cumin
1 1/2 - 2 tsp of seasoned salt
Chopped cilantro
(in my photos I cut recipe in half and used extra salsa)
Brown and then drain the burger in a large skillet. Stir in salsa and tomato sauce.
Added spices to taste. Stir in the cooked rice. Garnish with 2 TBS of chopped cilantro. This will make 6 - 8 servings. How easy was that?

ReplyDeleteI have to babysit this afternoon then have dinner for them all when my son gets off work and this recipe reminded me that my son loves mexican lasagna ( another easy one like this, connie..just layering beef, salsa and cheese with tortillas ) So...it's either going to be yours or the lasagna one...whew, you solved the whats for dinner dilemma today :)

ReplyDeleteHi Connie. What do you mean by "tomato sauce"? In Australia, tomato sauce = ketchup, and I don't think that is what you have used here. My guess would be canned, chopped tomatoes - is that right? Your recipe looks great, and I'd like to try it.
