First Birthday and Cake

Here are some pictures of the Carrot Cake recipe I posted awhile back but forgot to do the pics! Ok, this picture (below) is the real reason for this post; I just thought it was so cute I had to show you! This was at Itty Bitty's first birthday party last month and she had her birthday cake early because it was close to nap time and we weren't sure she could wait. Everyone else had to wait for cake until lunch was over.


This little one want a bite of cake really bad and kept a close eye on Itty Bitty enjoying hers. Finally the temptation was too much and when the opportunity presented itself she had a taste! So glad I got the shot!


I made Carrot Cake for this party, my recipe but doubled is here, enough for 35 people. This time I made sure I took pics but the final ones were not the best. I was running late! We were in the middle of redoing somethings in the kitchen and I was a little frazzled by it all and having to bake too. I grabbed frozen yogurt out of the freezer (instead of buttermilk). I keep buttermilk and yogurt starter measured out in ½ cup portions in my freezer so I don't have to remember to buy buttermilk for my occasional recipe uses and don't have to throw left overs out. I didn't notice the buttermilk/yogurt mistake until that night.

Also I forgot I was out of raisins, so I added an extra cup of grated carrots instead! That made a total of 8 cups of grated carrots for the doubled recipe! Everyone had their veggies for the day, I told you it was a healthy recipe! Everyone said it was the best carrot cake I had ever made! Apparently it's also a forgiving recipe :) I think the kids liked it best without the raisins too so from now on, I may make it without the raisins and with yogurt on purpose.


Grate the carrots......


Mix dry ingredients......(2 bowls for double recipe)

Fresh from the oven......

  6. I love that picture! It was so fun watching her watch the cake. I was expecting it and had the camera ready. Yes the cake is very good. Kids and adults love it.
